Here is my take on it having played and coached both. MOST people niether understand baseball or football at an intricate level. That understanding leads to a better appreciation. The difference is that those who do not understand football can still find it exciting because it is fast, violent, and providess an instant gratification measure of excitement. You can enjoy football based on it's constant action without an understanding of blocking scheems, coverage reads, etc...
That is why a majority of Americans like football more than baseball. With limited understanding, one has more visible action than the other and that need for instant gratification can be satisfied. I also have a thoery that most men who are football fans like to identify themselves with a sport that requires toughness, strength, and athletisism as if it it some how applies to them personaly. A guy who never played the game, doesn't understand it beyond its colisions and loud noises, would never have the courage to play it (beyond getting that varsity letter standing on the side line in high school) thinks that being a football fan somehow makes him a tough guy.
