Perfect summer meal

Perfect summer meal 


Tonight for dinner, we had what I consider about a perfect summer meal - BLTs (with fresh tomatoes), fresh corn, and watermelon for dessert.  What would you 5 consider the perfect summer meal?

substitute the watermelon for cobbler (blackberry) and ice cream - both homemade. Otherwise I agree with your entrée and choice of side!wink

I am with you, not a big fan of watermelon but blackberry cobbler with ice cream sounds wonderful. I have a fond place in my heart for blackberries, I made my first money by picking  and selling them to the neighbors.

BLT's with homegrown tomatoes can't be beat. Also try a tri color salad made with home grown tomatoes, mozzarella cheese, avocado and olive oil for dressing if you are one of the high class types who need a salad.

- Chilled fish ceviche with fresh lime, cilantro, and tomatoes...topped with fresh avocado.
- Grilled garlic shrimp
- Grilled corn on cob
- Key lime pie

- Mojitos to drink

Grilled salmon with a honey-lime-ancho chile pepper glaze served with a fresh corn and black bean relish.

-Grilled corn on the cob wrapped in aluminum foil with butter, garlic salt, basil and black pepper
-Tossed salad with some of those fresh tomatoes you mentioned
-Grilled garlic-buttered French bread

Have to agree with the OP on this one. Ever sine my tomatoes starting coming off I have been living off of BLT's or some variation. Try home made pimento cheese instead of the lettuce.

Come to think of it there isn't much that can't be improved by adding fresh tomatoes, hot pepper and bacon.

I like to add sliced fresh cucumbers and maybe sliced onion. I have made a grilled tomato cucumber bacon and swiss (with a little mayo) sandwich which, at the time, wife and I thought was the best sandwich either of us had ever eaten. I've been chasing that dragon ever since.

We had a farm dinner as well, It was great, but a little odd.

Cucumber salad with home grown tomatoes, cucumbers and dill with olive oil and balsamic vinegar.
Then we scrambled up 6 eggs from my mom's hen house with home grown bell and spicy peppers and onions.

Toasted up some English muffins

a few things to add:

mash some avocado with a little greek yogurt (or mayo) and use it for the mayo on the BLT. it is seriously amazing!

I had to use some green tomatoes up before we went on vacation since I didn't think they'd make it until we got back. So I fried them up and made a  bacon, pimento cheese, and fried green tomato sandwich. not exactly healthy but seriously so good!

your are warm here...the best one is a free cold beer (i.e. from your neighbor's fridge).

Our dinner last night.

I cooked spare ribs on the big green egg while SWMBO made potato salad, baked beans and deviled eggs. Oh, and fresh tomatoes from the back deck.
